Role Description This is a full-time, on-site Sushi Chef role based at Restaurant akiraback marrakech in Marrakesh-Safi, Morocco. The Sushi Chef prepares a variety of sushi and Japanese-inspired dishes, ensuring consistent quality, taste, and presentation in line with restaurant standards. Daily tasks include selecting and handling seafood, cooking rice, preparing sauces and garnishes, and arranging plates with precision and creativity. The role involves maintaining strict hygiene and food safety practices, managing mise en place, and coordinating with kitchen and service teams during service. The Sushi Chef also supports menu development, contributes ideas for specials, and helps train junior kitchen staff as needed.
Qualifications
- Strong culinary skills in Japanese cuisine, including Cooking and Seafood preparation.
- Proficiency in Food Preparation techniques specific to sushi, sashimi, and related dishes.
- Commitment to high Hygiene and food safety standards in a professional kitchen.
- Ability to maintain consistency, speed, and quality during busy service periods.
- Previous experience as a Sushi Chef or in a similar culinary role, preferably in upscale or fine-dining environments.
- Knowledge of knife skills, portioning, and plating aesthetics.
- Strong teamwork and communication skills, with the ability to collaborate across kitchen and front-of-house staff.
- Willingness to work flexible hours, including evenings, weekends, and holidays.
- Formal culinary training or certification is an advantage.
