Role OverviewCrazy Horse Paris - The Dubai Edition is seeking an experienced and highly operational Head Bartender to lead all bar and beverage operations within a fast-paced premium entertainment environment.
This is a hands-on leadership role responsible for managing the complete beverage operation across the venue, including Bartenders, Barbacks, and Beverage Runners.
With two performances per evening and a sustained beverage service throughout the second dinner show, the Head Bartender must combine luxury hospitality standards with speed, organization, commercial awareness, and strict inventory control.
The successful candidate will take full ownership of beverage service from opening preparation and pre-shift briefing through final inventory, closing procedures, and nightly reporting.
Key ResponsibilitiesTeam Leadership & Training Manage, supervise, and train the team of Bartenders, Barbacks, and Beverage Runners*.
* Conduct structured pre-shift briefings before each service.
* Ensure the beverage team understands expected covers, VIP guests, beverage promotions, premium products, upselling priorities, show timings, service windows, and operational changes.
* Train the team on beverage preparation, service standards, cocktail specifications, product knowledge, upselling, POS procedures, and operational efficiency.
* Establish clear expectations for each team member before service begins.
* Monitor performance throughout service and provide immediate coaching where necessary.
* Create and manage the scheduling and deployment of Bartenders and Barbacks according to expected business levels.
* Ensure adequate staffing and correct positioning of team members across all bars.
Bar Opening & Pre-Shift Operations Take responsibility for the opening and readiness of all venue bars.
* Ensure all bars are fully stocked, organized, clean, and operational before doors open*.
* Verify all necessary spirits, wines, Champagne, mixers, garnishes, ice, glassware, equipment, and supplies are available.
* Ensure appropriate stock pars are maintained at each bar.
* Confirm all equipment, refrigeration, POS systems, and bar tools are operational prior to service.
* Coordinate mise en place, batching, garnishes, and pre-service preparation to maximize efficiency during show periods.
* Conduct opening inventory and verify stock levels before service begins.
Beverage Service Management Lead and manage beverage operations throughout both performances.
* Take particular ownership of the sustained beverage operation during Show 2, where beverage service continues throughout the dinner-show experience.
* Coordinate beverage production between Bartenders, Barbacks, and Beverage Runners.
* Manage beverage service timing around the performance schedule.
* Ensure drinks reach guests within established service standards without disrupting the performance.
* Monitor and actively manage bar ticket times* throughout service.
* Prioritize beverage orders based on show timing, guest requirements, and operational urgency.
* Coordinate closely with Captains, FOH management, Runners, Reservations, and other departments.
* Adjust staffing or workflow immediately when service volume changes.
* Maintain continuous communication between the bars and Beverage Runners.
* Ensure bars remain stocked and operational throughout the entire performance.
Premium Beverage Sales & Upselling
- * Drive premium beverage revenue through active management of upselling.
- Train Bartenders and Beverage Runners on premium beverage recommendations and suggestive selling.
- Ensure the team has strong knowledge of Champagne, premium wines, premium spirits, signature cocktails, bottle offerings, and VIP beverage products.
- Identify opportunities to increase average beverage spend while maintaining a sophisticated and guest-focused approach.
- Track premium product performance and communicate sales opportunities to management.
- Encourage consistent upselling without negatively affecting service speed or guest experience.
Beverage Quality & Consistency
- * Ensure all drinks are prepared according to approved recipes, measurements, presentation standards, and specifications.
- Maintain consistency across every bartender and bar station.
- Conduct spot checks on cocktails and beverage presentation throughout service.
- Maintain correct portion control and pouring standards.
- Ensure appropriate glassware, garnish, temperature, and presentation for each beverage.
- Correct quality issues immediately when identified.
Stock, Inventory & Cost Control Establish and manage appropriate stock pars* for each bar.
* Conduct and supervise opening and closing inventory procedures.
* Monitor beverage consumption and stock movement throughout service.
* Maintain accurate inventory records.
* Monitor stock variances, wastage, breakage, complimentary beverages, transfers, spillage, and over-pouring.
* Investigate unexplained stock variances.
* Implement procedures to reduce wastage and unnecessary beverage costs.
* Ensure all stock transfers and movements are properly recorded.
* Assist with beverage ordering and stock replenishment.
* Ensure FIFO stock rotation and appropriate storage of all beverage products.
* Monitor high-value and premium beverage inventory particularly closely.
Closing Procedures Take ownership of the complete bar closing process.
* Ensure each bar is closed according to an established bar closing checklist*.
* Confirm bars are cleaned and organized, equipment is shut down correctly, stock is secured, POS procedures are completed, and all closing inventory is recorded.
* Conduct or supervise the final nightly inventory count.
* Review wastage, breakage, transfers, and stock variances.
* Ensure all bar areas are prepared appropriately for the following service.
Nightly Bar ReportThe Head Bartender will be responsible for submitting a final bar report after each operating night, including where applicable:
- Beverage revenue
- Premium beverage sales
- Bar ticket time performance
- Opening and closing stock
- Stock variances
- Wastage and breakage
- Complimentary beverages
- Operational issues
- Equipment or maintenance concerns
- Staffing issues
- Guest feedback
- Product shortages
- Recommendations or actions required for the next service

Candidate Profile Minimum 3–5 years of professional bartending experience within premium hospitality, luxury restaurants, hotels, nightlife, entertainment venues, or high-volume operations.
* Previous experience as a Head Bartender, Bar Supervisor, Bar Manager, or Senior Bartender with leadership responsibility*.
* Proven experience managing and training bartenders and support teams.
* Strong understanding of high-volume beverage operations.
* Strong knowledge of cocktails, spirits, wine, Champagne, and premium beverage products.
* Strong commercial awareness and ability to drive beverage revenue through upselling.
* Experience managing inventory, stock pars, wastage, and stock variance.
* Comfortable working with strict service timings and performance schedules.
* Strong organizational and team-management abilities.
* Strong POS and reporting skills.
* Able to remain calm and decisive during high-volume service.
* Excellent communication and leadership skills.
* Comfortable working with international and VIP clientele.
* Experience within dinner shows, theatres, nightlife, banquet operations, entertainment venues, or similar time-sensitive hospitality environments is highly desirable.
* UAE hospitality experience is an advantage.
