About the Role:
We are looking for an experienced Cost Controller to lead and drive the cost management agenda across our premier hospitality operations in Egypt.
This is not a back-office accounting position—you will be operationally embedded in our restaurant operations. You will actively manage, monitor, and optimize costs across food, beverage, labor, and overheads to protect margins and drive profitability. You will directly supervise the Storekeeper and partner closely with the Head Chef, Procurement, and Executive Leadership to ensure financial accuracy, enforce internal controls, and guide strategic menu engineering.
Key Responsibilities: • Cost Monitoring & Profitability: Track daily F&B COGS, analyze actual vs. theoretical variances , lead recipe costing with the Head Chef, and perform waste/shrinkage root-cause analysis. • Inventory & Procurement Control: Direct weekly spot-checks and monthly full inventory counts. Reconcile stock records, audit receiving processes, enforce FIFO/FEFO standards, and review purchase orders. • Budgeting & Forecasting: Partner with executive finance teams to build annual F&B budgets, prepare monthly rolling forecasts, track CapEx, and monitor pre-opening expenses. • Systems & HQ Reporting: Maintain recipe databases and ERP/POS integrations. Deliver weekly flash reports, monthly reconciliations, and KPI dashboards for executive leadership. • Audit & Compliance: Enforce internal control policies across purchasing and storerooms while supporting internal, external, and brand audit requirements. • Team Leadership: Directly supervise, train, and develop the Storekeeper while driving a culture of cost-consciousness across kitchen and floor teams.
Experience & Education: • Education: Bachelor’s degree in Accounting, Finance, or Business Administration. • Experience: 5–8 years in F&B cost control, with at least 2 years in a supervisory or mid-management capacity. • Industry Background: High-volume, multi-outlet, or premium dining operations (F&B / Hospitality experience is essential). • Franchise Exposure: Prior experience working with international brands, multi-concept groups, or franchise models is a strong plus.
Technical Competencies: • Software: Hands-on experience with major ERP systems (SAP, Oracle, or Microsoft Dynamics) and F&B POS systems (Micros, Simphony, Foodics, etc.). • Data Analysis: Advanced Microsoft Excel capabilities
