THEN is looking for a passionate and organized Chef de Partie – Sweet to take responsibility for the day-to-day operation of our sweet and pastry section.
The Chef de Partie will be responsible for preparing and producing THEN’s cakes, desserts, baked goods and other sweet products while maintaining consistent quality, presentation and production standards.
This is a hands-on kitchen role suited to a chef who is creative, reliable, detail-oriented and comfortable working in a growing production kitchen.
KEY RESPONSIBILITIES Lead the daily operation of the sweet production section.
* Prepare cakes, loaf cakes, desserts, cookies, tarts and other sweet products according to THEN recipes and standards.
* Follow recipes accurately and maintain consistent taste, texture, size and presentation*.
* Organize daily production according to orders, delivery schedules and required quantities.
* Prepare mise en place and ensure all ingredients are properly measured, prepared and stored.
* Monitor baking times, temperatures and product quality.
* Maintain proper food handling, hygiene and sanitation standards.
* Ensure the sweet section is clean, organized and fully stocked throughout the day.
* Monitor ingredient usage and communicate shortages or production needs to the Kitchen Manager.
* Assist with testing and developing new sweet products when required.
* Train and guide the Commis working within the sweet section.
* Minimize waste and ensure efficient use of ingredients.
* Properly label, date and store prepared products and ingredients.
* Coordinate with the savory section and kitchen team when production schedules overlap.
* Help maintain a smooth and efficient production workflow within the central kitchen.
