Job DescriptionAs Restaurant Manager at Tutto Passa, DELANO Dubai, you will lead the day-to-day operation of our vibrant, elevated Italian restaurant, creating a warm, energetic and effortlessly stylish experience across breakfast, lunch and dinner.

From a seamless breakfast experience to elevated à la carte lunch and dinner service, you will ensure every moment feels considered, personal and distinctly Tutto Passa.
Working closely with the Director of Food & Beverage, culinary leadership and the wider DELANO team, you will take ownership of the restaurant’s people, guest experience, operations and commercial performance.
Key Responsibilities
- Lead the daily operation of Tutto Passa across breakfast, lunch and dinner, maintaining consistently high standards throughout each service.
- Lead elevated à la carte lunch and dinner services, ensuring strong floor management, attention to detail, pacing and personalised guest engagement.
- Be highly visible on the floor, building genuine relationships with guests and creating the warm, social and generous hospitality at the heart of Tutto Passa.
- Lead, motivate and develop the restaurant team, creating a positive culture built around personality, confidence, teamwork and genuine hospitality.
- Manage the different operational requirements of breakfast, lunch and dinner, ensuring smooth transitions and appropriate team deployment throughout the day.
- Conduct daily briefings covering reservations, VIPs, menu updates, guest preferences, service priorities and commercial opportunities.
- Maintain strong knowledge of the Italian-inspired menu, ingredients, beverages and concept, ensuring the team can confidently guide guests and make thoughtful recommendations.
- Work closely with the culinary and bar teams to ensure seamless communication, service timing, presentation and consistency.
- Drive restaurant revenue through effective floor management, table optimisation, upselling and strong awareness of daily business performance.
- Monitor key performance indicators including revenue, covers, average spend, labour productivity, guest satisfaction and cost performance.
- Manage staffing, schedules and deployment effectively according to reservations, forecasted covers and business demand.
- Recruit, onboard, coach and develop team members, providing regular feedback and creating opportunities for progression.
- Build relationships with hotel guests, regulars and Dubai residents, creating experiences that encourage loyalty and repeat visits.
- Support the successful delivery of brunches, special events, seasonal activations and restaurant experiences.
- Partner with F&B leadership and Marketing on opportunities to strengthen Tutto Passa’s positioning within Dubai’s restaurant scene.
- Take ownership of guest feedback and service recovery, resolving concerns confidently, thoughtfully and promptly.
- Ensure the restaurant’s presentation, atmosphere and service flow consistently reflect the Tutto Passa and DELANO experience.
- Maintain compliance with food safety, hygiene, licensing, health & safety and operational requirements.
- Manage inventory, operating equipment and supplies responsibly while supporting effective cost and waste control.
- Lead from the floor during busy services, remaining composed, hands-on and solutions-focused.
Qualifications
- * Restaurant Leadership: Proven experience as a Restaurant Manager or strong Assistant Restaurant Manager within a luxury hotel, lifestyle property or elevated standalone restaurant.
- À La Carte Experience: Strong experience leading high-quality à la carte restaurant service, with an excellent understanding of service sequence, pacing, floor management and guest engagement.
- Italian Restaurant Experience: Previous experience within an Italian or Mediterranean restaurant concept is highly desirable, together with a genuine appreciation for Italian food, culture and hospitality.
- Service Excellence: Comfortable balancing busy services with elevated standards, attention to detail and personalised guest experiences.
- People Leadership: Proven ability to lead, coach and develop diverse restaurant teams while creating an engaging and positive working environment.
- Commercial Acumen: Strong understanding of revenue, average spend, labour productivity, cost control, forecasting and restaurant profitability.
- Guest Experience: Naturally engaging and confident on the floor, with the ability to build relationships with guests and handle service recovery effectively.
- Food & Beverage Knowledge: Strong food and beverage knowledge with an appreciation for quality ingredients, Italian cuisine and contemporary restaurant trends.
- Communication: Excellent interpersonal and communication skills with the confidence to collaborate across F&B, Culinary, Marketing and hotel leadership.
- Organisation: Highly organised and able to manage multiple service periods and priorities within a fast-paced restaurant environment.
- Language Skills: Fluency in English is required; Russian or Italian or additional languages are an advantage.
