Objective of the Position:
Assume responsibility for the preparation and cooking of "مضغوط" and "كبسة" dishes, ensuring the highest quality standards and authentic ingredients. Oversee kitchen staff to guarantee production speed and maintain a clean working environment that complies with food safety standards.
Main Responsibilities:
- Prepare and cook various types of مضغوط and كبسة according to established recipes and standards for the restaurant.
- Professionally handle pressure cooking with various sizes, adjusting cooking times and temperatures to ensure high-quality meat and poultry.
- Ability to manage daily and specific quantities of ingredients and produce, minimizing waste.
- Prepare and handle meats, poultry, vegetables, and spices according to traditional recipes.
- Monitor the quality of incoming raw materials (grains, meats, fresh produce) and ensure their safety and suitability.
- Supervise kitchen assistants and delegate tasks to ensure timely order fulfillment, especially during peak hours.
- Strictly adhere to health and safety standards, personal hygiene, and cleanliness of kitchen tools and equipment daily.
- Participate in inventory audits and determine daily and weekly food supply needs.
- Ability to cook various types of rice and ensure proper cooking levels according to the required specifications (نثري، شعبي، الخ).
Skills
Required Qualifications and Skills:
- Minimum 4 years of experience as a مضغوط/كبسة chef in recognized Saudi restaurants or major catering establishments.
- Complete mastery of traditional Saudi cooking techniques and recipes.
- Ability to prepare spice blends and marinades according to established recipes.
- Manage pressure cooking safely and professionally, adjusting cooking times to match order quantities and peak hours.
- Ability to work under pressure and endure long hours in a hot kitchen environment.
- Participate in developing new dishes or improving recipes in coordination with management.
- Basic leadership skills to guide assistants and organize work.
- Valid health certificate (or ability to obtain/renew it promptly).
- Permanent residency that allows for transferability.
