Role Description The Chef De Partie is a full-time, on-site role based at Assila in Jeddah, responsible for managing a designated section of the kitchen and ensuring high standards of food preparation and presentation. This role includes overseeing mise en place, cooking and plating dishes according to hotel standards, and maintaining consistency in taste, quality, and appearance. The Chef De Partie will support menu execution, coordinate with Commis Chefs, and collaborate with Sous Chefs and the Head Chef to meet service demands. Daily tasks also involve monitoring food safety and hygiene, managing stock rotation, minimizing waste, and contributing to training and development of junior team members. The role requires active participation in service, effective communication with the kitchen and service teams, and flexibility to work shifts, weekends, and holidays as needed.
Qualifications
- Professional culinary training or diploma from a recognized culinary school or hospitality institute.
- Proven experience as a Chef De Partie or Demi Chef in a hotel, fine dining restaurant, or upscale culinary environment.
- Strong skills in food preparation, cooking techniques, and kitchen operations within at least one section (e.g., hot kitchen, cold kitchen, pastry, or grill).
- Knowledge of food safety standards, HACCP principles, and proper hygiene and sanitation practices.
- Ability to organize and prioritize tasks, manage mise en place, and maintain a clean and efficient workstation under pressure.
- Capacity to guide, train, and motivate junior kitchen team members while contributing to a respectful and inclusive work environment.
- Effective communication skills and ability to work collaboratively with multicultural teams across kitchen and service areas.
- Flexibility to work variable shifts, including weekends and holidays, and adapt to changing business needs.
- Basic understanding of cost awareness, portion control, and waste reduction to support kitchen efficiency.
- Previous experience in luxury hotels or premium culinary concepts in the Middle East is an advantage.
- Working proficiency in English; knowledge of Arabic is beneficial.
